Varietal Composition
Cabernet Sauvignon (50%) from the vineyard of Moshe fesherman in Mavo Hama (near Tel Fares, Golan Hights)
Zinfandel (50%) from the vineyard of Alon Cohen in Kfar Tabor (Lower Galilee).
Production Highlights
The varieties were processed separately before the final blend was created. The Cabernet Sauvignon grapes were soaked for 12 hours, after which some of the juice was removed from the tank. The Zinfandel grapes were harvested relatively early to preserve their natural crispness. The bunches were pressed whole, the must was refined and then tank fermented at a relatively low temperature.
Wine Characteristics
This light-bodied wine has a clear intense rosy hue and dominant aromas of fresh strawberry and tropical fruit with a trace of herbs and acidity that gives it a refreshing crispness.
